On a Monday morning our despatch chiller is empty, not so much as a single lonely pot of paté sits on the stainless steel shelves. Why? Because we don’t prepare a single thing until you have ordered it, every pack of fish is sliced to order, every fresh portion is filleted on demand and every pot of pate’ measured out and blended once your order hits our inbox. We could go for the easy option, pile it high and utilise the freezer but that goes against our ethos. If you’re going to do it at all try and do it better than everyone else.

Trout

Twice a week we receive a delivery of fresh RSPCA Assured Steelhead Trout from our suppliers on the West Coast of Scotland. Kames have farmed these exceptional fish for over 50 years making them the oldest family-run farm in Scotland. Kames have won numerous awards for their welfare of the fish, with an ethos of low stocking densities and a hands-on slow growth husbandry approach. Awarded Best Aquaculture Company in the UK in 2022 they followed that up with the Best Animal Welfare Award in 2023. Kames are 100% committed to sustainability and the environment.

Salmon

We are delighted to be working with Loch Duart, the world's first salmon farm to be approved by the RSPCA and the world's first Ikejime approved salmon farm. Born and raised on the Northwest Coast of Scotland, Loch Duart farm their own lineage of salmon which can be traced back to the wild fish that swam the rivers of Scotland over 40 years ago, as close to wild as farmed salmon can be. With low stocking densities, the salmon are slow grown and fed, a specially commissioned high marine content feed from sustainable sources resulting in beautiful, fit healthy fish, recognised worldwide as the best tasting farmed salmon with the lowest possible impact on the environment.
